Awabi (Abalone) : Wealth and Longevity The abalone is an ancient symbol of long life and believed to bring great fortune and prosperity.
Our abalone is gently simmered to ensure a tender, melt-in-your-mouth texture, fully drawing out the distinct, luxurious umami flavor of the seafood.
Matsukaze Yaki (Sweet Chicken Loaf) : Honesty and Transparency Inspired by an ancient Japanese Noh play. The poppy seeds are sprinkled on only one side, leaving the back empty, symbolizing honesty with nothing to hide.
The sweet, seasoned chicken is cut into a fan shape (Suehiro) to invoke prosperity and expanding fortune.
Ikura (Salmon Roe) : Abundance and Descendant Prosperity The round shape symbolizes a year free of conflict, disputes, or sharp edges.
The bright red salmon roe, lightly salty, pops satisfyingly in the mouth, offering a luxurious taste of the sea and symbolizing a richly abundant new beginning.
Ebi (Shrimp) : A Wish for Long and Healthy Life The curved back and long antennae resemble a dignified elder, symbolizing elegant longevity.

Salmon Saikyo (Saikyo Miso Grilled Salmon) : Amulet Against Evil and Success The vibrant red-orange color wards off evil, and the wordplay between Sake (salmon) and Sakeru (避ける, to avoid) blesses the year with success by avoiding misfortune.
